Below recipes are some spice(powder) that can be used at home for foods.....Kadaila vangartha vida aathula pani airtight box la vecha nanna irukum.

1. Red Masala Paste:
We can use this for spicy curries. example side dishes for chapathi, vegetables etc...even for pulov and briyanis.
Ingredients:
oil 1 tablespoon
15-20 dried red chillies
3 tablespoons coriander seeds(dhania)
1 tablespoons cumin seeds(jeerkam)
1/2 teaspoon fenugreek seeds(venthayam)
1 teaspoon black peppercorns(Milagu)
smal piece of ginger, peeled.
1 tablespoon shredded coconut(fresh thuruviya thenga)
1 teaspoon tamarind paste
1/2 teaspoon turmeric powder
1/2 cup water.
Method:
Heat oil in a large pan over medium heat. Add red chillies, dhania, Jeerakam, Milagu, venthayam and ginger. Nanna varuthuedukavum. cool nicely. then add coconut, tamarind paste and turmeric. Gring the mixture nice in to smooth pasteadding little water. Once done transfer to airtight container and store it. Always use dry spoon so that it wil not get spoilt.

Dhaba Masala:
Can be used for Chenna masala, peas masala etc......
Ingredients:
3tablespoons cumin seeds(Jeeragam)
3 tablespoons Dhania seeds
small piece of lavanga pattai stick
1 .5 teaspoon whole cloves(Krambu)
1.5 teaspoon vendhayam
1.5 teaspoon Chili powder
1 teaspoon manjal podi
1 teaspoon jathikai podi.( jathikai vangi kayavechu podi akavum)
1 teaspoon salt.
if needed 1 teaspoon garlic powder( kayavechu podi pananum poonda)
Method:
dry roast all spices mentioned above in medium fame. remove spices from stove and cool it down. grind the spices and store in air tight container.

Home style garam Masala:
Ingredients:
2 tablespoons Jeeragam seeds
1 tablespoon Dhania seeds
1 tablespoon Black Milagu
small piece of lavanga pattai stick
10 green elakai
1 teaspoon krambu
1 teaspoon venthayam
5 bay leaves.(briyani ilai or tej patha)
Method:
dry roast all spices and grind it to fine powder.
store in airtight container and use when needed using dry spoon.

When u get season for Manga, buy Manga and dry in sun for some days. Nalla kanja apprm athai eduthu nalla mixie la podi panni vechukonga. U can use it in stir fried vegetables, curries, soups etc.........

This is very useful for fruit salad or vegetable salad dressings, fruit juices etc.
( fruit salad or vegetable salad mela light thoovi sapta taste innum nanna irukum.)
1 tablespoon Jeerakam, varuthu and podi panadhu
4 tablespoons aamchur powder
2 tablespoons ginger powder
2 tablespoon table salt
2 teaspoon red chilli powder
1 teaspoon perungayam.
Mix all these properly and store in air tight container.
