YELLOW PUMPKIN SOUP
INGREDIENTS
2 1/2 Cups or 500 gm yellow pumpkin, washed and cut into discs with skin
1 onion large
2 green chillies
1-inch piece of ginger
2 cloves of garlic
1/4 tsp roasted cumin (jeera) seeds
10 curry leaves finely chopped
salt to taste
METHOD
Put the pumpkin in a pressure cooker along with onion, green chillies, ginger, garlic, roasted cumin seeds and 2 cups of water. Pressure cook for about 10 mins.
Take off the pressure and cool.Putinto a blender.
After it is well blended, put it back on heat and bring to boil.
Season to taste.
Serve hot, garnished withcurry leaves.
